The answer came back to the heart of Neelia’s: storytelling through sweets.
Every flavor has something to say. It can start a conversation before anyone says a word. It can remind someone of home, introduce them to something new, or turn an ordinary day into a small occasion.
That belief is guiding this next chapter.

The Neelia’s Box brings seasonal stories together
One of the most exciting additions is The Neelia’s Box, a curated box of favorite things from the kitchen.
The box will rotate with the season, community favorites, and cultural fusion flavors. Each release will offer a chance to try a small collection of sweets designed to feel connected, thoughtful, and fun.
The Neelia’s Box will be released on the first Monday of each month.
That monthly rhythm matters. It gives each box room to reflect what is fresh, inspiring, and meaningful at that time.
The Neelia’s Box also creates a lower-pressure way to explore the menu. Instead of choosing one dessert, guests can experience a small story told through several bites. It is perfect for people who love variety, people who want to discover a new favorite, and people who enjoy sharing dessert with friends or family.
Expect the box to feel curated rather than random. The goal is not simply to fill a container with sweets. The goal is to create a small experience that feels complete, from flavor to presentation.

Tastings and dessert experiences are becoming a bigger part of the plan
Neelia’s next chapter also includes more spaces for people to try, learn, and connect.
That means tastings with local beverage companies, popup workshops, classes, and dessert experiences that go beyond ordering and eating. These events are designed to invite people into the creative process.
Dessert is often the final course, but it can also be the beginning of a conversation. Popups will be fewer and more intentional

That does not mean popups are going away. They are still part of the story. But the schedule will be more selective. Neelia’s will focus on a few places that feel especially aligned, including companies the team adores and festivals they love.
This shift allows the business to protect its time, quality, and creative energy. Popups are joyful, but they take a lot of preparation. There is menu planning, production, packing, setup, service, and cleanup. When done well, they bring the brand face to face with the community in a special way.
End-of-year order availability will also be limited.
Fall and winter tend to fill quickly for bakers, especially with holidays, gatherings, weddings, parties, corporate celebrations, and family events. Neelia’s is already quite booked for the Fall/Winter season, with some openings still available.
The best advice is simple. If there is a date in mind, submit an inquiry or send an email as soon as possible. Waiting can make it harder to secure a spot, especially during the busiest months of the year.
This is a good change. It reflects growth, demand, and trust from the people who continue to invite Neelia’s into their celebrations.
It also helps ensure that each order receives the care it deserves.
The menu is getting smaller and bolder
A smaller menu might sound like less at first. In this case, it means more focus.
Neelia’s standard menu will become more curated, with bolder seasonal flavors and clearer creative direction. This gives the kitchen more space to develop desserts that feel layered, expressive, and closely tied to the community.
The “create your own” option will still be available for custom orders, so there will still be flexibility for people planning a special event or looking for something personal. The difference is that the everyday standard menu will feel more refined.
A curated menu can also make ordering easier. Instead of scrolling through too many options, customers can choose from a smaller list of desserts that have been carefully shaped around the season and the style of the kitchen.

The team is growing this fall
Another joyful update is that Neelia’s has a team.
This fall, Neelia’s will onboard two new interns from UNC. The business will also work with a local marketing agency to launch and explore a few new projects!
Neelia’s is also hiring market workers.
This role is perfect for someone who loves desserts, enjoys talking with new people, and can bring warmth to a customer-facing space. Markets and popups rely on more than baked goods. They need friendly people who can answer questions, describe flavors, help guests choose, and make the table feel welcoming.
